The pets you'll want in your stables at all times (for PvP) are as follows: 2x Spirit Beasts, Shale Spider, Quilen, Serpent.
The reason you'll want two Spirit Beasts is due to their heal, which is on a 32 second cooldown, and gives you the opportunity to swap between them. Something to note is that you should also put Prowl on auto-cast.
You'll only really be using your Shale Spider for Arenas, which provides a 3 second stun (does share DR with Intim), and provides you with an undispellable Kings.
Another pet you may want to have on hand for Arenas would be a Crane (4 second sleep, can be tremored by Sham/WoTF'd by Undead). You should really only be using this for non-Shaman (Healer) and Undead (Healer) teams.
As for your Quilen/Serpent, these are your "pre-buffing" pets. Simply put, you bring one out before the start of an Arena game/Battleground and cast the buff shortly before the gates open. That is to assume your team does not have one of or both buffs covered, then you'll be switching to Spirit Beast(s) for Battlegrounds (not so much Rateds, at least not often) or your Shale.
Edit: As for your pet spec, you'll want one of your SBs to be Fero, and the other Cunning (Used not only for the heal, but Roar of Sacrifice, should you likely die from dots after a quick fight). Your Shale should be Fero, and as for the others, it doesn't matter.
