Seeing as I'm playing Templar or Gladiator, probably armorsmith or weaponsmith.

I see, so how many "main" proffesions can you pick? 2 just like WoW or just 1?

You can level as many as you want to 399 (i think) but only have 1 at 400. Not sure what that means in terms of what you can craft and shit but I'll probably have Weaponsmithing as my main one if that's the case.

Going to go Alchemy on my sorc to start off. If I level an alt or get enough money for a 2nd profession I'm going to be the one that lets you make necklaces and shit.

^ This.
You can only "master" one profession. So the best of the best shit can only be made by those that master that profession but you can do as many as you'd like. Just a fair warning though, they are VERY costly and VERY time consuming. I have Alchemy up to 199 and Tailoring up to 160ish on my Sorcerer on Chinese Aion and it took quite a few hours and gold to get that far. Gear that can come from it is totally worth it though if you're willing to farm the mats for it.

Handicrafting Alchemy and Armorsmithing on my Cleric. Handicrafting is probably the best profession for making money and the good low level jewelry lasts a long time ( Blue level 18 rings/earrings will last you to mid/low 30s ).
Alchemy just because the game is very consumable heavy and mats are easy pretty easy to gather.
Armorsmithing is self explanatory.
