1) Do you get a GCD from casting detect magic after the poly? Is it worth that GCD to throw the detect magic on then?
2) Would the macro look like
/castsequence reset=1 Polymorph(Rank 1), Detect Magic

very much so worth it... the only time i can think of that you shouldn't use it is when... lets say you are on the FF target, hes getting quite low but you see the opponents priest starting to cast a gheal, no CS up. sheep him, fireblast or w/e the target. however, one GCD from a dps doesn't mean much in the long run, but can mean a lot for healers in the long run. If they have to cast dispell more than one time to get a sheep dispelled it could cost them the game.
for instance, in a recent 3v3 match we had killed a warrior, they still had their paly and rogue up. our shaman was almost oom, our rogue and i were low HP. how did we solve it? i sheeped the rogue while our rogue went nuts on the paly, i sheeped + decent magic, i saw the detect magic get dispelled, i put it up right after, essentially spamming it, there was no way he could get the polymorph off before the full duration wore down. You can CC more than one target by doing this, but of course this takes you out of play in the match, if its illogical to do so, just throw down one sheep + DM, as i said that extra GCD for them could cost them the game.
no question about it that its worth it, however making a macro isn't really necessary imo, sheep = C DM = shift + C, easy enough :P, you dont want to waste extra time when you dont need to (i.e. a team w/o a defensive dispeller). and it is quite a kick to stand in one spot, throwing up DM and watching a paly try to cleanse... cleanse... cleanse... then die.
I just bound detect magic to alt + middlemouse since middlemouse isnt that great for core combat abilities anyway and i just hit it the second the poly goes off. Then as amplefroth said you dont have to cast it when its not worth it. When i know a paly is too busy to cleanse it or its only gonna be a 3 sec sheep anyways i will target my sheep, start casting, and then go back to my target so im only spending 1.5 seconds away from my dps target at most.
this works great against paladins and Fel hunters, however priests remove 2 magic debuffs at a time so if the only cleanser is a priest then its not gonna do anything without a 3rd debuff like Winters chill, and even then the priest has twice the chance that he will get the poly too. Its only like 35 mana though so its not a big deal if u do it on accident.

a priest, when targeting an enemy, will dispell 2 buffs with dispell, when targeting a friendly it only gets rid of 1. not to mention its much, much more mana intensive than cleanse, so you can really work a priests mana by doing it.

Dispel has always removed 2 effects. Haven't ever noticed poly/detect effecting me...

Some teams use Paladins. But you're right, unless you have winter's chill stacked a few times on your poly target, sheep+detect isn't that useful against priests.

the thing is tho, if the sheep doenst get dispeled cuz of detect magic, its not just another gcd used by enemy healer, but the target also stays sheeped for that much longer.
gcd isnt so bad for a mage cuz you can use the time to move around to reposition or kite, not necesaryly sitting their wasting the 1.5s.
I run druid/lock/rogue in 3's and I have to say, DM is extremely good if my lock tries to devour sheep off of myself or him.

This is a very much needed thing when fighting a team with some sort of dispell, which is quite common. The Global cd isn't much a problem because when it does get dispelled it will be worth it x2 by making it so the healer isn't doing anything for a few secs and either is the cc'd target.
But detect magic will be removed soon, so start to learn stacking up winters chill:P
